Avocado Bacon Penne

Have I ever mentioned how much I love pasta? No? Are you sure? Well then. I LOVE PASTA. And this avocado bacon penne is some of the ultimate comfort food for me. Click through to the recipe to get in on this absolutely decadent, satisfying recipe.

It all starts with bacon. All good things start with bacon, don’t they? Yes, yes they do. Most of this recipe is pretty fluid, and as such, you get to pick how much you want in this recipe. I used 8 strips for 3-4 people, but extra bacon is always encouraged. I cook mine in the oven, but feel free to cook it how ever you like. If you’ve never cooked bacon in the oven, I HIGHLY recommend it. Completely painless and completely easy to clean up after, my  least favourite thing about cooking bacon in a pan. The Kitchn has a fantastic tutorial for oven bacon.

I feel like a pretty big dope right now, because I know I took a picture prior to mashing up the avocado, but there ya go. Life, amirite? I used 2 medium avocados, cracked black pepper to taste, 1 tablespoon of lemon juice, and 1 tablespoon of olive oil, and mashed them up into a creamy, glorious mash. Lemon and olive oil can also be added to taste. This, this is your sauce. Prepare your body.

When your bacon is good and delicious, remove it from the pan and let it drain on some paper towel. Chop up the bacon and set it aside. At this point, start preparing your pasta. I used ~3/4 cups of penne per person. When it is finished, drain and set aside.

THE MOMENT OF TRUTH. In a large bowl, combine your pasta, avocado mash, and bacon. Mash with a fork and mix until combined.

Serve. Insert into facehole. You’re welcome.
