Can we take a second here to appreciate how darn delicious sweet potatoes are? They are so super versatile, but my favourite is when they’re seasoned and baked in the oven. They get that little bit of caramelization but they’re still savoury and oh man they are tasty. Click through below to get my favourite recipe for sweet potato chunks.
At this point, I would actually recommend pre-heating your oven to 400F. This is going to move rather quickly. Wash and cube your sweet potatoes (this recipe is flexible in the number of potatoes you use – I usually use 2-3 large potatoes for 3 people) into 3/4 inch – 1 inch cubes. They don’t have to be even or pretty, just mouth-sized for when you’re shovelling them into your face later on. Skin on or off is your choice, but I prefer to get my roughage. Place the chunks in a large bowl. Drizzle with your oil of choice and toss with your hands until lightly coated.
Dump the chunks out onto a lined baking pan. It is here that you get to pick how you want your sweet potatoes to taste. This time, I used salt, Montreal steak spice, and cayenne. You might like to try brown sugar and cinnamon, some maple syrup, or another one of my house favourites – salt, garlic, and cayenne. Season your chunks to taste, and place them into the oven for 20 minutes, stirring them at least half way.
Once they’re finished, serve hot. They aren’t going to last very long.
Sweet Potato Chunks
Prep time: 5 minutes
Cook time: 20 minutes
Yields: ? Servings
- Sweet potatoes, washed
- Oil of your choice
- Seasoning of your choice
- Preheat oven to 400F.
- Dice your sweet potato into 3/4 inch – 1 inch cubes. Place in a large bowl.
- Lightly coat sweet potato cubes in oil of choice.
- Dump sweet potato chunks onto a lined pan and spread evenly.
- Season the chunks as desired (e.g. Montreal steak spice, salt, pepper, cayenne, maple syrup, etc.)
- Bake for 20 minutes, stirring at least half way.
