So I had been looking for something that was filling but healthy for breakfast. Something that would keep me full until lunch time, and would keep me away from too many naughty snacks (read: 10:00 am Miss Vickies binges). BUT I wanted to make sure that it also tasted good. Because no one wants to eat anything that isn’t delicious. Enter steel cut oats… Click through to join me on this delicious adventure.
So these oats are dead easy. Steel cut oats are the least processed oat you can eat, besides eating full groats (yes, that is the name. Groat.). These beauties are full of fibre, and keep you full for hours. What could make them any better? CHOCOLATE. You’ll want to collect ~1 cup of steel cut oats, 3-4 cups of liquid (depending on what texture you would like – less liquid will give you a firmer, chewier oatmeal, while more will give you a more silky oatmeal), 1 tbsp vanilla, 4 tbsp cocoa powder, cayenne pepper, and chocolate chips.
Combine 3 cups of water and 1 cup of almond milk (you can replace this with any other kind of liquid), 4 tbsp cocoa powder, and 1 tbsp vanilla. The cayenne pepper can be added to your own taste, but you won’t regret spicy chocolate. I also added 1 tbsp cinnamon as an afterthought. A delicious afterthought. Whisk until combined. PRO-TIP: Cocoa powder HATES being mixed into water, so the whisking will suck at first. It will combine, though! Once it comes to a rolling boil, add 1 cup of steel cut oats and mix. Reduce the heat to low, and simmer for 20-25 minutes, until you reach your desired consistency. Giving it a mix along the way will help to keep it from sticking to the bottom of the pot.
Serve hot. If you’re feeling fancy, stir in some chocolate chips before serving. I also added a tablespoon of Nutella to the mix, and it was AMAZING. Serve on its own, or with berries. ENJOY! 🙂 Leftovers keep well in the fridge for about a week – it warms up like a dream in the microwave with a splash of milk!
Chocolate Steel Cut Oats
Yield: ~5 servings
- 1 cup steel cut oats
- 4 cups liquid
- 4 tbsp cocoa powder
- 1 tbsp vanilla extract
- Cayenne pepper, to taste
- Chocolate chips, to taste
- In a pot, combine 4 cups of liquid, 4 tbsp cocoa powder, 1 tbsp vanilla extract, and cayenne pepper to taste. Whisk until combined. Bring to a boil.
- Stir in 1 cup of steel cut oats. Reduce heat to low. Simmer for 20-25 minutes, until desired texture is reached.
- Once cooked, add chocolate chips as desired. Stir until combined.
- Serve hot with nutella, berries, etc.
