So this is another one of those meals where you get home after a long day, and you have no idea what you want to eat. What you do know is that you’re feeling lazy as eff and you want to put minimal effort into getting tasty food into your facehole. Instead of picking up some fast food or ordering in some take-out, follow me on through for this super simple and filling meal.
Straight up, this is one of those meals where I ask myself “what do I have in my fridge?” This is a super lazy take on my smoked sausage pasta – a recipe that’s to come later, because all of my photos for that recipe got corrupted
(I’m sad that my photos didn’t work out but I am glad that I have an excuse to eat that again soon…) Collect yourself some 3/4 – 1 cup pasta, 1-2 smoked sausages (or regular sausage or some other protein if you really want to gripe at me that you’re lazy), a tomato, a clove of garlic, a fistful of spinach, and some chili flakes if you like it spicy (which I do).
Start by slicing up your smoked sausage into coins, and brown them in a frying pan on medium heat. Mince the garlic clove and add it to the pan once the sausage has started to brown, turning the heat down to medium low. You may or may not need to add a little bit of oil for this step – these were chicken smoked sausages, so they were super lean. I ALMOST burnt my garlic, but I saved it from bitter disaster with a splash of olive oil. As you’re browning the sausage and garlic, boil your water and cook your pasta according to the directions on the bag.
While your pasta is cooking and sausage is browning, dice the tomato and chiffonade your spinach. Add the tomato first to begin cooking it down a little. Add the spinach to begin wilting it. Add chili flakes as desired. Once your pasta is cooked, drain it and add it to the frying pan, mixing well to combine all your ingredients.
Serve hot and go to town on it. I ended up adding some parmesan cheese on top, and it was AMAZING.
SMOKED SAUSAGE AND SPINACH PASTA
Cook time: 15 minutes
Yield: 1-2 servings
- 1-2 smoked sausages
- 1 clove of garlic
- 1 tomato
- 1 fistful of spinach
- 2/3 – 1 cup pasta
- Chili flakes, to taste
- Slice sausages into coins and brown in a frying pan.
- Mince garlic and add to the browning sausage, with a splash of oil if necessary.
- Boil water and add pasta, cooking to the directions on the packaging.
- Dice 1 tomato and add to the frying pan.
- Chiffonade spinach and add to the frying pan to wilt.
- Add chili flakes to taste.
- Drain pasta and add to frying pan. Mix until combined.
