Baked Sweet Potatoes

Now let’s get to “yam-ing”

So these are actually sweet potatoes stuffed with shredded chicken, taco seasoning and some other fun and delicious ingredients. It’s quick and easy I promise!

So step one is getting hold of some delicious shredded chicken.

Usually I make shredded chicken in the slow cooker. I put a few chicken breasts on a ‘bed’ of onion pieces [i.e. I cut one yellow onion cut into quarters the separate the layers out]. Season the chicken with salt, pepper and some sliced garlic cloves, add about 2 cups of chicken stock and cook on low for 8 hours. After 8 hours, remove and shred with 2 forks. Keep in fridge to use in salads, sandwiches and wraps for the week 🙂 .

Now for the real step one. Pierce two medium sized sweet potatoes all over with a fork, wrap in paper towel and put each one in the microwave separately for 5-8 minutes. Once cooled down, slice in half and scoop out the flesh like shown in the photo above. Spray your potato skins inside and out with olive oil and place in lined baking dish.

Next get the stuffin’ ingredient ready. Dice one yellow onion and mince 1-2 cloves of garlic. Cook over medium heat in a frying pan with some olive oil until soft and translucent. Add one cup of sweet potato flesh, one cup of shredded chicken, 1/2 cup of diced mushrooms, 1/2 cup of back beans, a little more olive oil as to not burn anything, and 2 tbsp of some wicked homemade taco seasoning!

Taco Seasoning Recipe:

  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/4 tsp salt
  • 2 tsp onion powder
  • 1/2 tsp white sugar
  • 1 tsp ground cumin
  • 1 tsp oregano
  • 1 tbsp chili powder

I use this taco seasoning recipe for all types of things! Store in a resuable jar in the cupboard with your other spices! 🙂

Once everything is well combined, add 1/2 cup of shredded cheese and mix it up to combine and melt. Now stuff those sweet potato skins until you can get no more in 🙂 .

Bake at 350 degrees Fahrenheit for 10 minutes. Add another 1/2 cup of shredded cheese to the top and bake for another 5 minutes until all melty and delicious. Serve with avocado and/or sour cream or salsa 🙂

RECIPE
Baked Sweet Potatoes
Serves 2

Ingredients

  • 2 medium sweet potatoes (for me one was 1 lb and one was 3/4 lb)
  • 1 cup shredded chicken (1 chicken breast or most of it, if it is a large one)
  • 1 yellow onion, diced
  • 1-2 cloves of garlic depending on size and preference, minced
  • 1/2 cup of drained and rinsed black beans
  • 1/2 cup of button mushrooms, diced
  • 2 tbsp of taco seasoning
  • 2 tbsp of olive oil
  • 1/2 cup of shredded cheese + another 1/2 cup for melting on top
  • 1 avocado sliced
  • Optional: Sour Cream and/or Salsa

Taco Seasoning

 

  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/4 tsp salt
  • 2 tsp onion powder
  • 1/2 tsp white sugar
  • 1 tsp ground cumin
  • 1 tsp oregano
  • 1 tbsp chili powder

Directions

  1. Preheat oven to 350 degrees Fahrenheit
  2. Start by piercing the sweet potato all over. Wrap each one in paper towel and microwave them one at a time for about 5-8 minutes. They will be hot so be careful!
  3. Next, letting them cool a bit, cut in half and scoop out the flesh. Try to keep the skins intact. Place the skins in a lined baking dish and spray both the inside and outside with olive oil.
  4. Next dice one yellow onion and mince 1-2 cloves of garlic. Cook in medium heat in a frying pan with olive oil for a few minutes. Until soft and translucent.
  5. Next add one cup cooked shredded chicken, one cup of the chopped/mashed sweet potato flesh, 1/2 cup of rinsed and drained black beans and 1/2 cup of diced mushrooms.
  6. Add a bit more olive oil so nothing burns and about 2 tbsp of taco seasoning.
  7. Once everything is warmed through and well combined, add in 1/2 cup of shredded cheese of choice (we used marble) and mix until all melted and well combined.
  8. Stuff everything into the potato skins and bake at 350 degrees Fahrenheit for 10 minutes.
  9. Top with the other 1/2 cup of cheese and put back in the oven to melt the cheese for about 5 minutes.
  10. Top with sliced avocado and sour cream and enjoy!
