Summer Fruit Salad


Once again, I have an easy one for you guys. Why is that, you might ask? Because when it’s summer time, I always find a few things: I don’t feel like being cooped up cooking, and I don’t want anything heavy. So we develop two requirements: quick and light! Fruit in the summer is so refreshing, and so easy to make. Click through to follow along!


LOOK AT THOSE BRIGHT COLOURS. LOOK AT EM. If that isn’t summer, I don’t know what is. In a medium sized bowl, combine 3/4 cup of whole grapes (I used green and red), 1 cup of blueberries, 1 diced granny smith apple, 1 diced nectarine, and 4 large strawberries, diced. In a separate bowl, combine 2 tablespoons of honey, 1 tablespoon of lemon juice (you can use concentrate if you don’t mind the tartness, otherwise reduce it to taste), and 1 teaspoon of vanilla. Mix the honey, lemon juice, and vanilla extract until the honey is dissolved and all three are well combined. Pour it over the fruit and mix until everything is coated. Cover it and let it sit in the refrigerator for at least an hour before serving.


Serve cold and enjoy!

  • “Dressing”
    • 2 tablespoons honey
    • 1 tablespoon lemon juice
    • 1 teaspoon vanilla extract


  1. Dice fruits as described above and place in medium sized bowl.
  2. In separate bowl, mix honey, lemon juice, and vanilla extract until combined.
  3. Pour “dressing” over fruit and mix until combined.
  4. Cover and let sit in the refrigerator for at least an hour.
  5. Serve cold and ENJOY!
