Asian Beef Stirfry

I’ve got to admit, I’m not always the most faithful meal prepper. Despite having the best intentions, I really struggle to a) get food prepped ahead of time (especially when my bed and my PJs are calling my name…) and b) to eat the same thing all week long. German Spaetzle

So this is actually going to be a part one of two blog post. Today we’re going to focus on the “noodles” – a post that would make my Oma and Opa proud. So spaetzle – say it with me, “SCHPETS-luh” – is a German dumpling. A tiny, delicious German dumpling. Now normally these would be served a little differently – say, fried in butter and topped with a thin gravy (which is HEAVEN). BUT, I thought to myself, these are kind of like noodles, and I have some quick stroganoff on the stove…WHY NOT PUT THEM TOGETHER? Cabbage and Ground Beef Stirfry

So let me tell you a little something about this stirfry. First and foremost, you need to know that it is delicious. I got the base of this recipe from the magnificent and blog-beloved Budget Bytes – I saw her video for it and just about DIED. I knew that I had to have it. Beef Thai Noodles

I love me some noodles; rice noodles, angel hair pasta, orzo, egg noodles, udon noodles – you name it, I have it in my cupboard. They are so versatile and more importantly, they are the reason I survived undergrad… 🙂

There is also no wrong time for noodles, and no wrong way for noodles. And some days, there is nothing quite as comforting as a big bowl of penne covered in tomato sauce and cheese. Simplicity at it’s finest and most decadent. Alas, some days, a girl needs a change. Some days, life calls for a spicy, salty, and savoury change. This Beef Thai Noodle dish will surely satisfy those cravings!
