I’ve got to admit, I’m not always the most faithful meal prepper. Despite having the best intentions, I really struggle to a) get food prepped ahead of time (especially when my bed and my PJs are calling my name…) and b) to eat the same thing all week long. BUT with a busy schedule like mine, I have to find time to get it done. This is a quick, satisfying meal that I cooked in less than 30 minutes (save for the marinade!). Click through to read more! So let me tell you a little something about this stirfry. First and foremost, you need to know that it is delicious. I got the base of this recipe from the magnificent and blog-beloved Budget Bytes – I saw her video for it and just about DIED. I knew that I had to have it. And oh my god did it ever live up to my hopes, dreams, and expectations. And it was easy. Click on through to see my adaptation.

Despite learning the same lesson every single time, it never ceases to surprise me how dang satisfying a sandwich can be. This Philly cheese steak sandwich does not fall outside that category, what with its tender beef, crunchy peppers, sweet onions mushrooms, and ooey, gooey mozzarella cheese… Pardon the drool. I love me some noodles; rice noodles, angel hair pasta, orzo, egg noodles, udon noodles – you name it, I have it in my cupboard. They are so versatile and more importantly, they are the reason I survived undergrad… 🙂
There is also no wrong time for noodles, and no wrong way for noodles. And some days, there is nothing quite as comforting as a big bowl of penne covered in tomato sauce and cheese. Simplicity at it’s finest and most decadent. Alas, some days, a girl needs a change. Some days, life calls for a spicy, salty, and savoury change. This Beef Thai Noodle dish will surely satisfy those cravings!

Happy Holidays and Merry Christmas! It’s that time of year full of parties, good food [and booze], celebration and just being with friends and family all the time. It’s also the time of year to ignore our diets until new years and just be happy with all the food and sweets we can possibly consume. 🙂

T and I picked up some delicious, fresh buns at the local farmers market today [along with some delicious rye bread in which we made amazing grilled chicken sandwiches for lunch; check out our instagram for the photo].
We decided we could make some meatball sandwiches with marinara sauce and melted mozzarella cheese, and they were a hit!
