So for some reason, I managed to go some time without eating pasta. Which is weird for me, considering that at least 50% of my body is pasta. Have I mentioned I love pasta? In the spirit of meal prep this week, I decided to bring back one of my favourite foods (PASTA.) with some smokey sausage, crisp veggies, and a silky rose sauce that I have been dying for all week. I’ve got to admit, I’m not always the most faithful meal prepper. Despite having the best intentions, I really struggle to a) get food prepped ahead of time (especially when my bed and my PJs are calling my name…) and b) to eat the same thing all week long. BUT with a busy schedule like mine, I have to find time to get it done. This is a quick, satisfying meal that I cooked in less than 30 minutes (save for the marinade!). Click through to read more! So this is another one of those meals where you get home after a long day, and you have no idea what you want to eat. What you do know is that you’re feeling lazy as eff and you want to put minimal effort into getting tasty food into your facehole. Instead of picking up some fast food or ordering in some take-out, follow me on through for this super simple and filling meal. Continue reading “Smoked Sausage and Spinach Pasta”
I love me some noodles; rice noodles, angel hair pasta, orzo, egg noodles, udon noodles – you name it, I have it in my cupboard. They are so versatile and more importantly, they are the reason I survived undergrad… 🙂
There is also no wrong time for noodles, and no wrong way for noodles. And some days, there is nothing quite as comforting as a big bowl of penne covered in tomato sauce and cheese. Simplicity at it’s finest and most decadent. Alas, some days, a girl needs a change. Some days, life calls for a spicy, salty, and savoury change. This Beef Thai Noodle dish will surely satisfy those cravings!

My love of pasta and avocado is not news – see my post here for Avocado Bacon Penne. BUT I also like fancy avocado – guacamole is absolutely scrumptious. This recipe adds some more veggies and protein to the mix, and is super tasty and satisfying. Even the day after, the leftovers held up (they may have been even better…)! I’m gonna go ahead and be straight with you here: I have a very serious pasta addiction. If there were help groups, my friends and family would likely make me attend. But honestly, how can you not LOVE such a versatile food! One of my favourite meals as of late are one-pot wonders — there is a single pot to deal with at the end, which heavily appeals to the occasional lazy girl in me. I’ve seen quite a few different spins on it, but this recipe is my own!
